Chickpeas with anchovy oil
- 200 g Monte Castello Chickpeas;
- 6 anchovy fillets;
- 1 sprig of parsley;
- Extra virgin olive oil to taste;
- Salt to taste;
- Pepper to taste
Soak the Monte Castello Chickpeas for about 8 hours in plenty of water. Boil the chickpeas in salted water for about 60 minutes (30 minutes in a pressure cooker). When cooked, drain the chickpeas. In a pan, heat a little extra virgin olive oil and place the anchovy fillets in it, letting them melt slowly. Add the chickpeas, mix and complete with the chopped parsley, salt and pepper to taste. Serve warm.
