Organic chickpea burger with vegetables

Chickpeas Hamburger


  • 300 g Monte Castello organic boiled chickpeas;
  • 3 medium potatoes;
  • 1 small aubergine;
  • 1 courgette;
  • 1 carrot;
  • 2 eggs;
  • 200 g of breadcrumbs
  • 1 sprig of parsley;
  • Extra virgin olive oil to taste;
  • Spices to taste
  • Salt to taste;
  • Pepper to taste;


    Cut the vegetables and cook them with spices to taste. We used curry and sweet paprika! Boil the potatoes with their skins. Blend the Monte Castello Organic Boiled Chickpeas. Peel the potatoes and mash them. In a bowl, combine the vegetables with the potatoes, then add the parsley, the blended chickpeas, the breadcrumbs, the eggs, oil, salt, pepper and the spices you like best: mix everything for a few minutes! Shape into balls then crush them to form a hamburger, roll in the breadcrumbs and put in the oven at 180° until golden brown.
