Roman mint flavored salad
- 320 g Monte Castello Black-Eyed Beans;
- 400 g green beans;
- 3 medium potatoes;
- Extra virgin olive oil to taste;
- Roman mint to taste;
- Salt to taste
Rinse the Monte Castello Black-Eyed Beans in water and then boil them in a pot with plenty of salted water for about 40 minutes, 20 minutes if you use a pressure cooker. Separately, cook the green beans and the potatoes cut into chunks. When the ingredients are ready, cut the green beans and add them to the potatoes and beans in a salad bowl. Season with salt and oil and add the Roman mint. Let it flavor and serve.
