Bean and Shrimp Salad


  • 500 g Monte Castello Cannellini Beans;
  • 500 g shrimp;
  • Lemon juice;
  • Chives;
  • Basil leaves;
  • Extra virgin olive oil;
  • Balsamic vinegar;
  • Salt to taste;
  • Pepper as needed


    Boil the Monte Castello Cannellini Beans, previously soaked, in plenty of water. Drain and dress them still warm with extra virgin olive oil and chopped chives. Boil the shrimp in water for about 3 minutes. Prepare an emulsion with oil, lemon juice, salt, pepper and a few drops of balsamic vinegar. In a salad bowl, add the cannellini beans and shrimps, pour the sauce and mix everything gently. Serve, to taste, with a few basil leaves.
