Spelt Balls

Ingredients:

  • 150 g Monte Castello Pearl Spelt;
  • 1 potato;
  • 1 carrot;
  • 2/3 spoons of Monte Castello spelt flour;
  • 1 sprig of parsley;
  • 1 clove of garlic;
  • 1 spoon of grated Parmesan cheese;
  • Vegetable broth to taste;
  • Breadcrumbs to taste;
  • Extra virgin olive oil to taste;
  • Salt to taste;
  • Chili pepper to taste

    Preparation

    Boil the washed Monte Castello Pearl Spelt, carrot and potato in a pot with water and salt. At the end of cooking, drain everything and mash the carrot and potato separately, reducing them to a puree. In a bowl, place the puree obtained, the spelt, the parsley, the minced garlic and the Parmesan. Season with salt, pepper and oil and finally add the spelled flour and the broth to obtain a soft but consistent mixture. Using a spoon, form some balls and arrange them on a baking sheet lined with baking paper and place the balls in the fridge for about 40 minutes. Then pass the balls in breadcrumbs and then arrange them on the pan. Drizzle with oil and place in the oven at 180 °C for about 30 minutes.
