Loaf Cake with Apricots and Dark Chocolate


  • 3 eggs
  • 120 g sugar / cane sugar
  • 80 g extra virgin olive oil
  • 125 g white yogurt
  • 300 g Monte Castello Flour for Bread and Cakes
  • 16 g of baking powder
  • 4 apricots
  • Dark chocolate flakes or chips


    Whip the eggs at room temperature with sugar, add oil and then yogurt. Sift the flour with the baking powder and add them gradually while continuing to mix. Cut 3 apricots into small pieces and put them in the mixture; do the same with dark chocolate. Grease and flour a medium loaf pan and pour the mixture into it; decorate with an apricot cut lengthwise and other chocolate chips. Bake the mixture in a preheated static oven at 180 °C for 40 minutes. Always do the toothpick test first!
