Lentil cream
Ingredients:
- 400 gr of Monte Castello Lentils;
- 1 carrot;
- 1 onion;
- 1 stalk of celery;
- 1 sprig of parsley;
- 2-3 slices of bread;
- Vegetable broth to taste;
- Extra virgin olive oil to taste;
- Salt to taste;
- Pepper to taste
Preparation
To prepare the Lentil Cream, wash and boil the Lentils in salted water for 25 minutes, 10 minutes if you use a pressure cooker. When cooked, drain them from the water. Then sauté a chopped carrot, celery, onion and parsley in a pan with a little extra virgin olive oil and then add the Monte Castello lentils and let them flavor, stirring for about 5 minutes. Meanwhile, boil some vegetable broth. At this point dilute the lentils with 5 dl of hot vegetable broth while continuing to stir. Season with salt and pepper and blend the mixture until creamy, adding broth if too thick. Then add a drizzle of oil and serve the Lentil Cream hot accompanied with toasted bread croutons.
