Red Lentil Crêpes
- 200 g Monte Castello Dehusked Red Lentils;
- 420 g water;
- Extra virgin olive oil to taste;
- Seasonings to taste;
Wash the peeled Monte Castello Red Lentils and leave them to soak for at least 2 hours. At the end, blend the Red Lentils. Heat a drizzle of extra virgin olive oil in a pan and with the help of a medium ladle pour the mixture to a thickness of about 0.5 cm. Cook about 3 minutes per side. Accompany your Crêpes as you prefer, both sweet and savory! In our recipe we used spreadable cheese, bresaola and rocket and a seasoned cheese, speck and spinach!
