Creamy lemon-scented barley


  • 320 g Monte Castello Pearl Barley;
  • 1 clove of garlic;
  • ½ onion;
  • 200 g shelled shrimp;
  • 2 medium zucchini;
  • 1 untreated lemon;
  • Extra virgin olive oil to taste;
  • 1 liter of vegetable broth;
  • 1 sprig of parsley;
  • Salt to taste;
  • Chili pepper to taste


    In a saucepan flavor the oil with garlic, add the shrimps and bring to a simmer. In a saucepan, flavor the oil with the onion and when the onion is wilted, pour the julienne zucchini. After washing the Monte Castello Pearl Barley, when the zucchini are lightly seared, pour it into the pot and add about 5 ladles of boiling vegetable broth until cooked. After about 20 minutes, when the broth has absorbed, add the shrimps to the barley, remove the garlic and season until cooked. When the barley is cooked, finish by grating the lemon juice, add the chopped parsley and serve.
