Pea Puree

Ingredients:

  • 500 g Monte Castello Dehusked Peas;
  • 1 shallot;
  • 50 g of butter;
  • Salt to taste;
  • Pepper to taste

    Preparation

    Wash the Monte Castello Dehusked Peas and drain them well. Fill a pot with plenty of salted water and boil the peas for about 40 minutes (20 minutes in a pressure cooker). Then drain them and save some of the cooking water. Melt the butter in a frying pan and add the finely chopped shallots. Once wilted, add the peas and adjust the salt and pepper. Let cook for about 10 minutes, then blend with an immersion blender. Add the cooking water set aside if the mixture is too thick.
