Savory Pea Pie


  • 250 g Brie cheese;
  • 115 g Monte Castello Dehusked Peas;
  • 100 g thickly sliced ​​cooked ham;
  • 200 g Castello Soft Wheat Flour;
  • 3 eggs;
  • 100 ml of seed oil;
  • 100 ml of milk;
  • 1 sachet of yeast for savory pies;
  • Extra virgin olive oil to taste;
  • Salt to taste;
  • Pepper to taste


    To make the Savory Pea Pie you must first wash the Monte Castello Dehusked Peas and cook them in boiling salted water for 40 minutes, 20 minutes if you use a pressure cooker. Once cooked, drain the peas and toss with the diced cooked ham in a pan with a tablespoon of extra virgin olive oil. After that, let them cool. eanwhile, beat the 3 eggs in a bowl and add the milk and seed oil. Then sift the flour with the baking powder and add it to the mixture. Once you have a smooth dough, add the diced cheese, and the ham and the sautéed peas; then season with salt and pepper. Butter a baking pan and sprinkle it with breadcrumbs, pour the mixture into the pan and garnish with grated Parmesan cheese. Bake in a convection oven at 180 °C for about 20-25 minutes.
