Green country soup


  • 320 g Monte Castello Country Soup
  • 250 g spinach;
  • 1,5 l vegetable broth;
  • 1 onion;
  • 1 sage leaf;
  • Grated cheese;
  • Extra virgin olive oil to taste;
  • Salt to taste


    Heat 3 soup spoons of evo oil in a saucepan and sauté the chopped onion and the whole sage. Clean, wash and chop the spinach and add it to the sauté. Stir and after a few minutes add the hot vegetable broth, cover and cook over moderate heat for 15 minutes. Add the Monte Castello Country Soup, season with salt and continue cooking for 25 minutes, 10 minutes if you use a pressure cooker. Serve, sprinkle with grated cheese.
