Spelt and Lentil Soup


  • 300 g Monte Castello Spelt and Lentil Soup;
  • 2 potatoes;
  • 1 onion;
  • 1 stalk of celery;
  • 1 carrot;
  • Tomato sauce to taste;
  • Extra virgin olive oil to taste;
  • 1,5 lt of broth;
  • Grated pecorino to taste


    In a saucepan, gently brown the chopped onion, celery and carrot in the oil. Add two diced potatoes and the hot broth. Let it boil for 10 minutes. Rinse the Monte Castello Spelt and Lentil Soup, add it to the broth and add the tomato sauce to taste. From when it starts to boil again cook for 25 minutes, 10 minutes if you use a pressure cooker or until desired. When cooked, sprinkle with grated pecorino. Serve with croutons.
