Mixed Pulses Soup with mountain flavors


  • 350 gr Monte Castello Mixed Legumes Soup;
  • 1 carrot;
  • 1 celery;
  • 1 onion;
  • 1 clove of garlic;
  • 200 gr of Mixed Mushrooms;
  • Tomato puree to taste;
  • Extra virgin olive oil to taste;
  • Grated Parmesan to taste;
  • Salt to taste;
  • Pepper as needed


    Cook the chopped carrot, celery and onion in 3 tablespoons of extra virgin olive oil. Add the chopped and seasoned mushrooms and cook for a few minutes. When the mushrooms have softened, add the boiling broth and add the Monte Castello Mixed Pulses Soup. After 10 minutes, add the tomato puree to taste and cook for about 35 minutes. Serve the soup with the croutons and a sprinkling of Parmesan cheese.
