Spring Soup
Ingredients:
- 350 g Monte Castello Soup;
- 1 carrot;
- 1 stalk of celery;
- 1 onion;
- 2 sausages;
- 200 g spinach;
- Nutmeg to taste;
- Extra virgin olive oil to taste;
- Salt to taste;
- Pepper to taste
Preparation
Rinse the soup in water. Sauté the chopped carrot, celery and onion in 3 tablespoons of extra virgin olive oil. Wash the spinach, chop finely and add to the sauté. Add the previously prepared broth and, when it boils, add the soup and cook for 40 minutes, 20 minutes if using a pressure cooker. Aside, brown and chop a sausage. When the soup is ready, add the sausage, season with nutmeg and salt, add pepper and serve with toasted bread.
