Rustic Soup


  • 350 g Monte Castello Rustic Soup;
  • 1 carrot;
  • 1 stalk of celery;
  • 1 onion;
  • 1 clove of garlic;
  • 200 g artichokes;
  • 2 sausages;
  • 2 potatoes;
  • 2 spoons of extra virgin olive oil;
  • Broth to taste;
  • Salt to taste;
  • Pepper to taste;
  • Grated Parmesan cheese.


    Clean the artichokes, cut them into pieces and cook them in a pan with a drizzle of oil and garlic. Meanwhile, rinse the Monte Castello Rustic Soup in water, sauté the finely chopped herbs in a saucepan. Peel the potatoes and cut them into cubes. Add the broth to the sauce, add the potatoes and cook for 5 minutes. When it starts to boil again, pour the soup, season with salt and pepper and cook for 40 minutes, 20 minutes if you use a pressure cooker or until cooked to taste. Halfway through cooking, add the artichokes. Separately, crumble the sausages in a non-stick pan and brown them. Serve the soup as soon as it is ready, adding a drizzle of raw oil and grated Parmesan cheese and pieces of sausage.
